Information technology in restaurant management: a systematic review

Abstract

Business management was transformed by information technology, and nowadays, besides being a competitive advantage, it is essential in food businesses. This paper aims to build an overview of the restaurant industry, and its management processes, and the use of information technology (IT). Therefore, a systematic literature review was conducted, analyzing articles published in English until the year 2020, available in 5 digital databases. Publications since 1980 were identified and selected, revealing that the use of information technology in restaurant management accompanied the maturation of technology, and resulted in concerns like necessity of investment in hardware and software, organizational culture, IT adequacy to different types of service, the role of leadership in the implementation, even the use of cutting edge technology for inventory management. Thus, this study offers an overview, and presents advances and benefits of the use of information technologies in restaurant management, as well as clarify that this subject can be deeply explored, especially considering local particularities, which directly influence access and ways of IT usage.
